ALLSPICE takes its name from its aroma, which smells like a combination of spices, especially cinnamon, cloves, ginger and nutmeg. Dried allspice berries resemble large brown peppercorns. Allspice is available whole or ground and has a pungent odor much like a combination of nutmeg, clove , ginger and cinnamon.
 Whole dried allspice will keep indefinitely when kept out of light in airtight jars. It can be ground in a spice mill or an electric coffee grinder. The ground spice loses flavor quickly. Allspice can be used as a substitute, measure, for measure, for cinnamon, cloves or nutmeg. To make a substitution for allspice, combine one part nutmeg with two parts each of cinnamon and cloves.
PINCH OF WISDOM: As allspice will keep indefinitely when kept in controlled environment, so Christian remain Christ like when they remain in fellowship with our Lord and strong, encouraging believers. However, much like allspice when it is ground, Christians too long away from fellowship with God and other believers may lose their strength and Christian flavor.
TASTE OF SCRIPTURE: John 15:4 “Remain in me, and I will remain in you.”
1 1/8 c. packed brown sugar 1/2 c. canola oil, 1 teaspoon vanilla, 2 eggs, 2 c. flour, 2 teaspoons baking powder, 1 teaspoon cinnamon, 1 teaspoon nutmeg. 1/2 teaspoon allspice, 1/2 teaspoon salt, 4 cups peeled and shredded sweet potatoes, 1/2 c. raisins, 1 c. walnuts
Preheat the oven to 350 degrees F (175 degrees C). Grease muffin tins to hold 12 muffins.
Whisk together brown sugar, oil, vanilla and eggs in a small bowl.
Mix together the flour, baking powder, spices, salt, and grated sweet potatoes in a large bowl. Make a well in the center, and pour in the egg mixture. Stir the egg mixture, gradually incorporating it with the flour mixture. Stir in the raisins and walnuts
Spoon the batter into the tins. Bake the muffins for 25 to 30 minutes Serve muffins hot. Enjoy.

PERSONAL NOTE:  I have not tried this recipe yet, but I feel it will taste much like pumpkin bread. If you try it, before I do, Please let me know what you think.
